Why cheese? Cheese contains a high concentration of high quality protein, calcium, and other important nutrients such as phosphorus, zinc, vitamin A, riboflavin, and vitamin B12. These are the elements that we need to build, develop and maintain our muscles, bones and organs. Cheese is high in calcium. As a mater of fact cheese is one of the main sources of calcium in our diet. 100 g Gouda cheese has around 700 mg of calcium, 100 g blue mould cheeses have around 490 mg of calcium. The next most important element we need for our healthy life is protein. Cheese contains lots of protein. 100 g Camembert has around 19.5 g of protein, 100 g blue mould cheeses have around 21 g of protein. Vitamins available in cheese are also very important for our organism. Cheese, particularly aged cheeses (Gouda), contains very small amount of lactose, the major carbohydrate in milk. That is because lactose is removed in whey during the production process and the remaining portion of lactose is converted into the lactic acid during the ripening. Who needs cheese most? Children in particular need high quantities of calcium and protein to develop their bones and organs. According to US National Dairy Council cheese has several health attributes. Certain cheeses have been demonstrated to reduce the risk of dental caries. NDC mentions that in order to help reduce tooth decay, it is helpful to follow the recommendations of health professionals and eat cheese immediately after meals. Growing evidence indicates that cheese can be part of dietary patterns to help reduce the risk of major chronic diseases such as osteoporosis and hypertension. There are many reasons for cheese popularity. We use approximately 10 liters of milk to make one kilo of cheese, that is why cheese can be considered as and concentration of all milk nutrients.
